  1. Put all ingredients in a bowl and blend with wire whisk. If desired, pour into 4 small jars or ramekins. Refrigerate for at least 6 hours to allow chia seeds to soak up the liquid and allow the pudding to become firm. Feel free to garnish with mint leaves, chocolate shavings, nuts, or fresh fruit like berries, mango, or bananas. See below for instructions on Chocolate and Berry versions.
Recipe Notes

Chocolate version: Add 2 tablespoons of cacao (cocoa) powder.

Berry version: Add 1/2 cup mashed (or blended) fresh (or frozen) berries (raspberries, blueberries, blackberries, or strawberries). Decrease water by 1 tablespoon.

The Vanilla version also tastes great with 1/2 teaspoon of cinnamon blended in when mixing all of the other ingredients.
