This diverse recipe can be baked for a hot dish, or eaten cold as a salad. Both taste delicious. I usually make enough so that I have enough to do both.

  1. Toss the cooked chicken with the lemon juice and soy sauce. If you thought ahead, chill for a few hours. But if not, this still works. Add in the vegetables, salt, pepper, and mayo. Place mixture in a baking dish for the casserole, sprinkle with almonds or chow mein noodles, and bake for 30 minutes at 350 degrees, or refrigerate in a bowl to serve cold as a salad. I like to do both, 1/2 and 1/2, depending on how many I need to serve.

Cauliflower "Rice" with Lime & Cilantro
This is a quick & easy side dish that also makes great leftovers, if there are any! It tastes fabulous alone as a side dish, but also works well for the base to top with stir fried meat and vegetables. You can omit the lime and the cilantro, but both really add to the great taste.

  1. Heat oil in a large skillet, add onions and garlic, cook for a couple of minutes on medium heat.
  2. Add riced cauliflower, salt & pepper. Cook for about 5 minutes until done, then stir in lime juice and cilantro.
