Here is the perfect quick and easy dessert. It is dairy-free, gluten-free, and Paleo and Keto friendly too. Three versions: Vanilla, Chocolate, and Berry, plus variations that can accommodate all kinds of taste preferences.

Ingredients
- 1 Can Coconut Milk Full fat, my favorite is Aroy-D
- 1/4 Cup Chia Seeds
- 1 Teaspoon Vanilla
- 4 Teaspoons Maple syrup Or substitute with stevia
- 1/2 Cup Water
- 1 pinch Salt Himalayan or Sea Salt

Instructions
- Put all ingredients in a bowl and blend with wire whisk. If desired, pour into 4 small jars or ramekins. Refrigerate for at least 6 hours to allow chia seeds to soak up the liquid and allow the pudding to become firm. Feel free to garnish with mint leaves, chocolate shavings, nuts, or fresh fruit like berries, mango, or bananas. See below for instructions on Chocolate and Berry versions.
Recipe Notes
Chocolate version: Add 2 tablespoons of cacao (cocoa) powder.
Berry version: Add 1/2 cup mashed (or blended) fresh (or frozen) berries (raspberries, blueberries, blackberries, or strawberries). Decrease water by 1 tablespoon.
The Vanilla version also tastes great with 1/2 teaspoon of cinnamon blended in when mixing all of the other ingredients.
