Toss the cooked chicken with the lemon juice and soy sauce. If you thought ahead, chill for a few hours. But if not, this still works. Add in the vegetables, salt, pepper, and mayo. Place mixture in a baking dish for the casserole, sprinkle with almonds or chow mein noodles, and bake for 30 minutes at 350 degrees, or refrigerate in a bowl to serve cold as a salad. I like to do both, 1/2 and 1/2, depending on how many I need to serve.
